In 2018, the town board approved plans for a new Popeyes in the Staples Plaza.  With the community’s hopes for its construction dwindling after the COVID-19 pandemic arose, everyone anxiously waited for any updates.  After three painfully long years, it’s finally open.  Employees trained for their opening day for well over a week, but nothing could have prepared them for the mobs of people desperately seeking to purchase crispy chicken sandwiches.  With Popeyes’s line extended all the way into the busy intersection on their opening day, it was made clear that the restaurant serves as a beacon of hope amid the pandemic.  Rather than driving all the way to the nearest Popeyes in Danbury, Connecticut to secure a comforting and crispy chicken sandwich, it’s now a short five-minute drive.  Although it’s no longer an hour’s worth of driving roundtrip, you still won’t end up saving any time.  The hordes of chicken-sandwich enthusiasts take away from the convenience of its new location; the drive-through line can easily take an hour because of them.  Luckily for Popeyes, customers will happily wait, regardless of the perils.  Popeye’s hype has surprisingly not died down.  People from all over Westchester continue to bombard the establishment every day, making the Staples Plaza the busiest it’s ever been.  Its unwavering popularity just goes to show how insatiable a pang of hunger for chicken sandwiches can truly be.
